YUMMY Sausage Stuffed Mushroom

Someone I knew had Italian Sausage over the weekend and it smelled and looked sooo good... so then the craving for Italian sausage started up (especially to think of having Italian sausage and jalapeno pizza... big NO NO) So I concocted this dish and OMG it was soooooo yummy!! :chef:

I found some lean italian sweet turkey sausage.

1. sautee sausage in a non stick pan w/ some oregano, basil&garlic, parsley, and pepper.
2. add a handful(small) of diced onions,handful(small) of sliced mushrooms, and a teaspoon full of crushed garlic.
3. add about 1/2 can of diced tomatoes w/ hot chiles. l
4. let that all simmer together to blend the flavors.
5. Gut out a portabella mushroom cap and fill w/ sausage mix.
6. spray a baking pan w/ pam, bake about 15 mins at 350.
7. Top it off by sprinkling a very small amount of LF mozz shreds and put back in til it melted.

WOW! :bib: It was excellent!!

I don't know how it added up measurement wise... for the sausage, i pre weighed it at 8 oz prior to cooking, and we can have 7 oz cooked turkey. I made sure it was the Lean turkey sausage. So i hope i 'guesstimated' correctly w/ the sprinkles of lf mozz cheese (wasn't even 2 oz). The veggies were probably 1/3 c of onion and mush prior to cooking, and the portabella cap was average size. 1/2 can of the diced tomatoes was maybe 1/3 cup prior to cooking? It came out very very tasty..... w/ a little spice from the chiles in the tomatoes. Definitely will be making this on a regular basis!!

And I don't know what kind you're getting, but the one I just looked at online has 10 grams of fat in a 3.8-oz serving. I believe it was Butterball Lean Turkey Sausage. That's definitely not OK on Medifast, so I'd advise reading the labels before you buy.

Yeah, when I posted the okay thing above based on the statement that is was LEAN Turkey sausage, I hadn't actually looked for any. The only one I found was Jenny O and like Robin said, 10g fat, and thats not lean based on our standards of lean. :mrgreen:

The kind of lean turkey sausage i was using was shady brook farms, and it had 110 calories, 7g fat, 1 carb and 1 sugar and 13 protien for one link, and 8 oz precooked was 3 links.... and it made a LOT of stuffing for the mushroom (more than one cap full) so what does this equate to? no more 'lean turkey sausage'??? :nonono:

I've made this twice now, and i haven't gained anything...... i haven't lost in a few days either but that's because i had a 'bad day' on thursday (in my journal) so i had to get back on the MF wagon full force yesterday....

Mike or Robin, I'm not sure about all the breakdown of the fat/cal/carbs that we can and can't have.... can you please let me know what I should be looking for when i'm buying my meats? Thanks....

Oh, dear. That's 21 grams of fat in one meal, from just the sausage. As a comparison, here's the fat in a 6-ounce serving of other proteins (I know 6 isn't quite right, but you can figure it from there):

Skinless chicken breast, 3 grams
Sirloin tips, 8.2 grams
Top sirloin, 9.8 grams

Even a T-bone steak has only 16.4 grams in 6 ounces.

I would try making this with GROUND TURKEY BREAST instead of sausage, add a couple dashes of sage and ground fennel to approximate sausage flavoring and saute it in a bit of olive oil in a non-stick skillet. then proceed with the recipe as stated. I make a pretty similar dish, except that I stuff large (cucumber sized) zucchini boats with the filling and bake until the zuchs are tender when poked with a fork. Hubby loves it and he's not medifasting.
If you can't find lean ground turkey, you can hand a whole boneless turkey breast to the butcher and ask him to skin it and grind it for you.
Also I discovered that I can have the butcher saw in half a frozen turkey for me. I bought the super cheap, loss leader turkey at the store before Thanksgiving and the butcher cut it in half for me in about 2 seconds. We got four dinners for 2 from a 5.99 turkey. My freezer is too small for a whole turkey and it takes way too long for 2 of us to eat a whole turkey.

the meal was just too good to not make and i was really bummed about it not being within guidelines.....
