So I found this recipe on the back of MSF Veggie Bacon. It looks yummy and from what I can see I believe it is ok for a lean and green. Please say yes>>>>

[color=blue]From the back of MSF Bacon Strips package:
Veggie Medley Fritta

1/2 Package (about 8-10 strips) MSF Veggie Bacon Strips
2 strips = 60 cal, 4.5 fat, 2 carb
1 cup broccoli florets
3/4 cup mushroom slices
2 finely chopped green onions
1 cup chopped green or red bell pepper
1 Tbsp butter/Margarine (ICBINB???)
2 cartons MSF scramblers (Egg Beaters???)
1/4 cup water
1/2 tsp oregano
1/4 tsp black pepper
1/4 tsp garlic powder
1 cup shredded Cheddar Cheese
1/2 cup shredded Parmesan Cheese
1/2 cup tomatoes

4-6 servings

There's probably too much salt in those bacon strips for me. It would be hard to tell how many servings because there's such a mixture of ingredients. Thee cheese would need to be low fat. How many of those strips would equal 5 oz of real meat? I dunno......just too complicated for me. I wouldn't have used it during the weight loss phase of the program. I found it much easier and safer to keep it simple amd I wanted to be positively sure I was on program. Just my humble opinion.

Thanks serendipity, I did ask for opinions! We are just getting so tired of meat and salads and this sounded so delish. Based on a side by side comparrison to the meatless options other MSF foods, 4 strips is equal to an allowed serving. I have some veggie shreds cheese too (soy cheese) that I was going to use instead of regular. There would be 3 of us eating it so I figured I would divide it into 6 servings and save the remaining for another night.

Just got excited about something different for a change.

Thanks again for your input. Maybe I will call support and ask their opinion.

That recipe is pretty involved (even for me ;) ) I don't know how the MSF eggs equates with regular eggs. Cheese is okay if its lowfat, which, is difficult to find if its parmesan.

It sounds yummy, but I would definitely check with Nutrition Support to see what they think.

By the way, I think we can have green onion ( since scallion and endive are still on our list). Regular onion was removed because of the higher carb content.

Hope you get answers. Keep checking the back pages of the Lean Cuisine.... I know there are some great recipes there and I have yet to get really tired of any of them.

Ditto...I know I have a long way to go, but I do the shakes and a very simple lean and green...keeps it tolerable and easy for me.

Well I called Nutrition Support and according to Laura :yes: I can use this recipe!!! YIPPEE!

So, what we figured out is if I drop the Parmesan cheese and use moderate or low fat ceddar (even better the veggie shreds I bought too)that there are 6 leans and 3 greens in the recipe. That works out GREAT for 3 of us! I would either have to double the veggies OR have a side of veggies with the meal.

YUM! I am makin a new dinner for the family tonight!! :chef:

For anybody who is interested here is the rest of the recipe...

You have the ingredients....

Cook the MSF bacon as directed on the box, and break into pieces.

Saute the broccoli, onions, peppers and mushrooms in the butter (ICBINB) until soft.

Mix eggs (or egg substitute) in a bowl with spices until fluffy then add the remaining ingredients. Pour into a greesed shallow 1 1/2 quart baking dish and bake at 350 for 25 minutes. (it took mine more like an hour, I think my dish was deeper.)

According to Laura at nutrition support. This equals 6 servings of lean and 3 servings of green. What I did was divide it into 6 servings and served it with a side salad. [color=red]I did not use the parmesean cheese
and I used veggie shreds instead of cheddar cheese, but Laura said it would be fine to use low fat cheddar if you wanted to.[/color]
