What's for dinner?

I have some Tri-Tip with an excellent rub on it in the fridge marinating and will make some fresh green beans and onions.

My go-to maintenance meal during the week is half a fritatta (egg substitute, roasted mushrooms, spinach, and a little reduced-fat feta or crumbled bacon) and two slices of reduced-calorie toast with sugar-free jam. So that's what's on the menu for tonight. With MAYBE some blueberries or a sugar-free Fudgsicle for dessert.

Not very exciting, but I can have it nuked and ready to go in under 2 minutes.

Got catfish thawing in a homemade marrinade. I am not really in the mood for fish, though, so I may go with a big taco type salad with leftover Soyrizo.

Man, I'm so boring...canned chicken, salad and a salad spritzer...I am cheffing out of a hotel room though, so it's not bad creatively!

We didn't have an L&G tonight... went to Bible study. Last night I made Di lowfat meatballs (Amy's) with string beans and low carb marinara. I had the meatballs in the marinara with tomatoes.

but we DID have dinner tonight!

I had baked chicken and stringbeans with crushed red pepper. Mike had meatballs, zucchini and marinara (sp?) sauce

Time for my Friday night shakeup again, so I'm having a little skirt steak with broccoli, and I think a banana drizzled with a tablespoon or so of melted dark chocolate and topped with some Cool Whip Free.

This is maintenance, though. And meant to head off my Friday night excesses.

Tonight it's a Greek stew with chicken breast, mushrooms, artichoke hearts and eggplant from the farmers market. Followed by the BEST part of maintenance - fresh, locally grown summer fruit from the farmers market. I never thought I'd enjoy fruit so much!

Yes Robin, I have been buying my kids fruit at the farmers market, it's beautiful right now.

cron
