For my meal today I used 1 cup of egg substitute and used 1 cup of mushrooms and 1/2 cup of bell/red peppers. I sauteed the vegetables using water and spoonful of butter buds and salt and pepper. Was this a legal meal? I hope so because it was good!!!

Is one cup of egg substitute equal to 2 eggs? If so then I believe that is legal.

edit: Yep I checked the Quick Start guide and it says 1/2 - 1 cup egg substitute is ok, but only 3x a week. :D

Perfectly legal! Isn't it amazing though how much eggs you get from the one cup egg subsitute.

Hate to rain on the parade, but I've been under the impression that red bell peppers are off limits. If so, substitue green bell peppers and you've got a winner!

Um, the picture in the section stating allowed vegetables shows red bell peppers in there... :question:

I knew I had seen something about just green bell peppers being allowed and I didn't know just where Nancy had posted about the red and yellow peppers.. Thanks Lisa for huntin it up.

Pashta, in the quick start book they also show apple slices with oatmeal and fruit on several different shakes as well as banana slices on the banana pudding and I know were not allowed fruit hehe...I wondered about that too but truly, I think it has to be just to "dress up the pics" lol :lol: That or they like messing with out heads. ;)

Yup, That's exactly right -- no red or yellow peppers for us yet. Toooo high in carbs. But when we reach maintenance -- look out peppers here we come. Well at least for the rest of you. :mrgreen: Peppers, green red yellow and otherwise kill my stomach. I'll just enjoy my carrots on maintenance.

I know I've been told this before, too, but according to fitday, the USDA and several other reliable nutrition sites, red peppers are only slightly higher than green peppers in calories and carbs. And red bell peppers are nearly identical to green beans (1 cup of red peppers has 39 calories and 8.98 grams of carb; 1 cup of green beans has 34 calories and 7.85 grams of carb).

So I don't quite get the problem with red peppers.
