As I was mixing my chocolate pudding I got it a little too thick and it reminded me of brownie mix. For all of you cooking whizzes out there do you suppose there is a way to make brownies out of the chocolate pudding or the chocolate shake? I am willing to try something but have no idea where I would begin. I love the cookie recipie and maybe this is a long shot but worth a try

Lisa -

Now wouldn't that be just grand? Medifast brownies .... ah, in heaven just thinking about it. :lol:

But until such time as that happens ... or in other words, until something freezes over :twisted: , I did find a great recipe in the lean cuisine area for mousse. There is one that is for making chocolate covered cherries .... which might help for your chocolate fix.

Chocolate Covered Cherry Mousse
Take 1/2 cup of really hot water and put it into a blender. Add 1 package of sugar-free cherry Jello, (or any flavor actually). Blend well on medium speed. Mixture will become frothy, but continue blending. Do not turn blender off while adding next ingredients. Next, add 4 ice cubes; allow them to blend into the mixture. Add Medifast shake mix (chocolate, in this case), allowing it to also blend into the mixture. Add an additional 4 ice cubes and continue mixing until thick. If mixture did not get thick enough, chill in the refrigerator for a few minutes.

The great thing with this one - you can make any mousse flavor by alternating the flavor of the jello. Orange Jello with a vanilla shake might be just like a creamsicle. And I love the consistency of mousse.

I have tried the mousse recipies and they are good but just no the same as a gooey chewy brownie!

Lisa,

I read somewhere, don't remember where, to try this:

If there's something you really miss the taste of, just let your mind conjour up the taste from your past experience. Think of that brownie, look at it, touch it, take a bite, chew it up good, swallow.....finish the brownie slowly, bite by bite. This is all done in your mind of course.

Every time I miss something, or watch someone eat something that I used to love, I do that and it totally satisfies me.

The mind is amazing! Try it!

Here's a Brownie Recipe :

4 packets of oatmeal, (not peach or vanilla berry)
3 packets of chocolate shakes
1 package of chocolate pudding
3 T. canola oil
4 packages splenda
1 T of cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt

Mix all ingredients and then add water until it looks like brownie mix. Use a 9x9 cake pan, sprayed with non-stick spray on butter, and bake for 15 minutes at 350 degrees.

It makes the edges a bit dark like I like my brownies.

It makes 8 servings with about 14 carbs a serving if you average out all the packets and the splenda. If you don't have chocolate pudding, use a shake as the 8th supplement. The squares usually weigh out to about 3 oz. each and I just cut them up, weigh them and package them to take with me anywhere I go. They are moist and brownie like. Hope someone else enjoys them the way I do.

Servings: This recipe makes 8 servings, so no more than 5 of these may be eaten per day! Each brownie counts as one Medifast Supplement..

Is this really approved by Medifast?


It is news to me and I honestly have no idea about using it.

The only part that I :scratch: wonder about is the use of baking the oil into the products. I know we are allowed to use canola or olive oil for the salad dressing or as a drizzle over vegetables but we are recommended not to use oil to cook meat or vegetables. Technically this yummuh recipe is not meat or vegetables but I'd like to :puter: check it out with the nutritionist unless our Guest has already done so.

I think the issue comes in when you talk about heating the oil past a certain temperature. It loses its benefits as such time.

For me, the issue would be eating just one brownie per serving.

I know, I know...most people would not have a problem with cutting the pan into the 8 servings and then eating just one every three hours but I know me best...I WOULD have a problem unless there was a kitchen guard on duty 24/7 here at the MakeMeThinner Cottage.

I'd know they were in there and at any time the Call of the Cupboards could lure me in there. I have to safeguard myself!

Remember, I cannot be trusted with a fork in my hands! or a brownie in the cupboard...

Unfortunately the brownies became a no no :no: for me the second I saw the oil. I have banned all oil at least through the weight loss phase :treadjog: plus as Nancy said I would be having mor than one every three hours I'm afriad :couch: Maybe I can play with the choco pudding mix and come up with a chocolate cookie or something similar :idontknow: Sweets and chocolate have never been a real issue for me personally but I love brownies and chocolate cookies :kool: I will let you know if I come up with anything :secret:

Sounds yummy!

Perhaps, it could use a substitute.... When i used to make chocolate cake, i would substitute the oil with applesauce. You could not tell.... Being a cook for the past ten years has given me lots of ideas! Try it! :-)
Hopefully you could use the unsweetened version... who knows!!! :-)

That would increase the carb and sugar count considerable, even with the unsweetened applesauce. Fruit's a big no-no during the weight loss phase.

I am not in such a rush to make these, but.... A time or two, I have just used PAM by the spoon full instead of just spraying it in. I guess desperate times might call for that, but I hardly think there is anyone who cannot live without it for now.

Yeah, big no on applesauce! But, perhaps using some of the Walden Farms raspberry jam might do the trick for binding purposes and flavor....
