Sometimes it shows right away because the mass of the food is in your bowels, sometimes it shows later -- it's a complex issue, really. But the timing sounds about right for the fat to actually get into storage. There's lots of balancing of variables in the equations. The same goes for exercise, too. When you exercise, the muscles build mass and retain water, so you might actually WEIGH more even though you're losing inches of fat, and it may take a day or two to equalize.
It's kind of like accounting -- the Grand Total at the end of the time period is the main thing. The Line Items help you analize how you got there.
No doubt, the dh, aka Science Guy, will chime in here with some actual scientific detail (I've got a "soft" science degree, not a hard science like Mr. Brainiac).
