L/G: Spicy Chicken and Broccoli "Alfredo"...yum!

Well I just developed this one for dinner tonight and I thought I would share since it was completely yummy and did the trick of squashing my craving for chicken/broccoli with alfredo over linguini. Let me know if you try it and what you think! :D

Lightly spray a skillet with Pam. Over low-medium heat, combine 1 tsp of minced garlic, 1 tbsp of spicy brown mustard, a couple of sprays of I Can't Believe It's Not Butter Spray Garlic and Herb variety and hot sauce to taste. I used Frank's Red Hot, about a tsp. Mix the ingredients while heating until it is well combined. Add two chicken breasts, flipping occassionally to be sure they are lightly but even covered with the mixture.

Now for the broccoli alfredo part....

Steam broccoli in a saucepan. When broccoli is tender, drain water and return to the stove over very low heat. Add 2 tbsp of SF/FF/CF Walden Farms Ceasar dressing, and a dash of garlic powder. Mix until broccoli is evenly and lightly coated. Heat over very low heat until the "alfredo" sauce is warm.

I will note that I made this for two people....my fiance doesn't get a special dinner in this house unless he cooks it himself! :lol: Funny thing, he loved it and asked me to make sure and cook it again!
