Shrimp Lean n Green

Been experimenting and trying to create some new meals.
I have had this a couple of times and its really yummy.

7 oz of shrimp
1/4-1/2 cup of low fat/low sod chicken broth
3/4 cup lettuce mix
3/4 cup of julienne zuchinni, diced tomato, sliced mushrooms, minced garlic
old bay seasoning, McCormick Italian seasoning (peppermill), McCormick peppercorn medley

Heat the chicken broth in a skillet, once steaming add shrimp and sprinkle with old bay seasoning to taste. Cover and simmer.

3/4 cup lettuce mix in a wide bowl.

In another skillet, spray with olive oil pam,saute the zuch, diced tomato, sliced mushrooms, minced garlic for about 3 minutes then pour a little of the chicken broth from the shrimp skillet. Sprinkle liberally with the fresh ground, italian herbs and peppercorn medley.

Put the shrimp on your lettuce mix and then top with the saute veggies.Add 1 tbsp of Kraft free zesty Italian fat free dessing.

YUM!

I just happen to have some frozen shrimp in my freezer and I think I'm going to try this tomorrow!

Note about the shrimp

with the frozen shrimp..be sure to weigh out about 9 oz cause once they cook down their usually an ounce or two less then you started with. :)
