Okay, I know there are threads about this already...but this is my experience with the noodles. I ordered them from Miracle Noodle, but they have not arrived. So, out of curiousity, I bought he Tofu version of the fettucine at Whole Foods. I rinsed and then BOILED them for 6 minutes, drained and added sauce. I did not get ONE bite down without my gag reflex sending me to the bathroom and I fed them to my dogs. Who by the way ate them all. :shock: I was so frustrated that the texture was SO awful. Like hard, rubbery worms.

But, today I went to my local low carb store, and the owner was there. So I asked HIM if he ate them and he said he loves them. I told him what I did, and he said that probably boiling them so hard ruined them. Big tip. He told me to rinse them, let them dry for 5-10 minutes, boil some water, turn the heat off, and put them in the water for 2 minutes. So, I bought some angel hair of the tofu version (much better because they are thinner so thinner = less rubber). I did what he said and added them to some stir fry. Not bad. I can tolerate them. I am not sure how others LOVE them so much. But I think that I will keep experimenting. The moral of this long story seems to be DON'T BOIL THEM.

I also ordered some from miracle noodle and have not recieved them yet. It has been 2 1/2 weeks. No email or anything.

I also tried the fettucini tofu version and rinsed, put into boiling water, and took them out as soon as the water boiled again. I put soy sauce on them, and mixed with chicken and veggies. My boyfriend even liked them. We will be eating them again.

MIRACLE NOODLES

So after a long wait I FINALLY got my Miracle Noodles today. I know that others feel differently but I prefer these 100 times to the Tofu. The texture, IMHO, is nowhere near as rubbery.

I actually found these next to the Tofu in the cooler at Safeway. They were already cooked and in liquid. Added them to a Chicken Stir Fry, and while they do add bulk to the meal without adding much else (1 g carb, 1 g protein), for me its not a good thing.
For those of you with normal sized stomachs though, I would say that these are perfect. Helps fill you up. Reminds me alot of Raman noodles.
Mind you, these are precooked and sealed with water in a plastic bag.
I haven't found the dried ones that you cook yourself, so can't comment on that.
