Shirataki Noodles...are they a possibility?

Postby ascicles » March 10th, 2006, 9:54 pm

Obviously the word "noodle" suggests that this wouldn't be a likely choice on this diet, but hear me out. These noodles are tofu (kind of) based, and they are very low in all of the neccessary catagories. Here is the nutritonal info...

Amount
Per Serving (2 servings per 8 oz. bag)

Calories 20
Calories From Fat 5
Total Fat 0.5 g
Saturated Fat 0 g
Cholesterol 0 mg
Sodium 15 mg
Total Carbohydrate 3 g
Dietary Fiber 2 g
Sugar 0 g
Protein 1 g
Vitamin A 0 %
Vitamin C 2 %
Calcium 10 %
Iron 2 %

20 calories, 0.5 grams of fat, and 3 grams of carbs? That's less than most lowfat salad dressings!

What is Shirataki? Shirataki is composed of thin gelatinous strings made from yam flour (polysaccharide-glucomannan) from the Konnyaku root and has very low caloric or digestible food values. This traditional Japanese food is enjoyed for its simple taste and unique

Can someone provide some information on whether this is allowed or not? Please tell me it is!

ascicles, I wish I could be of more help to you but my degree is not in nutrition. I honesty do not know. I'd suggest that you contact the TSFL/Medifast nutritionist. Her email address is aVerhoeven@medifastdiet dot com

Ascicles,

Please let us know what you find out from the nutritionist. I'd love to try these if they're "legal." I'm not familiar with this product. Should I go to a specialty store?

Thanks,
Lynda

They are great if you are not expecting an exact noodle taste. They take on the flavor of what you put on them (sauces, meats).

Atkins-friendly, so I used to have them all the time. I buy them at the Japanese market

Good news! I emailed the nutrition link on medifast's website, and this is the response I received...

You can use shirataki noodles on the program. They are low enough in carbohydrates that they do not effect the program. This would be the vegetable part of your lean and green meal.

~Amy

I responded back asking if it should be used in conjunction with vegetables or if this should be the entire "green" part of dinner. I'll update when I find out.

Either way, this sounds like a nice way to at least get something similar to noodles if you are craving them.

I've actually never tried them either. Supposedly they are fairly tasteless, and have a bit of a different texture than regular noodles. One word of advise, from what I've heard they have a "fishy" odor when you take them out of the package...but that comes out when you cook them.

I can't wait to try some Chicken Alfredo, thanks to shirataki noodles and Walden Farms Alfredo Sauce.

Okay...I am now on a quest to find these noodles somewhere in the Dallas area. I guess I will start at some local asian food markets. I cannot WAIT to try these!

If you have an Asian supermarket, they are really common. The area I live in (Raleigh) has a high Asian population though, so they may be a bit more common around here.

Supposedly Shiritaki noodles have been featured on some television show (maybe Oprah) as a healthy alternative to noodles, so I've heard that they are difficult to find if you live in a town with only one or two stores that carry asian products.

we have a large asian community in Arlington (7 miles from me)...I think I will start there and branch out if I have to. I think you can order them from Amazon.com (of all places!) I am really anxious to see if they affect my blood sugars....I will have to start with just a few bites. I will let you guys know how it goes.

I doubt you will have a hard time finding them in an area as large as Dallas/Arlington. If you lived in Nebraska, it would probably be a different story :)
