We're actually having cold weather here in California and something warm and different for dinner sounded good. Soooooooo, I got creative.
I browned very lean ground beef with onions, garlic, salt and pepper and worcesteshire sauce and drained well.
Then I cooked a bag of frozen cauliflower until it was very soft. I drained it well and then used a potato masher and added Molly McButter, garlic powder, salt & pepper.
I put the meat mixture in the bottom of a casserole dish and then put the mocked cauliflower on top and baked it for 20 minutes!
This is my lean and green for tonight.
I had a small portion and John pigged out!!
