Shell-less Tacos

My kids love tacos, well ok, me too, but it's tough to eat them on the plan. I cooked very lean beef as usual, added the spice mix and water and let it simmer a bit while I chopped up part of a green pepper. I filled the kids shells with the regular beef mix and then added the chopped green pepper and added a liberal amount of Tabasco sauce to the remaining beef. This certainly made it interesting !!! The kids dressed their tacos with cheese, tomato chunks and sour cream as usual while I had a spicy plate of the taco beef and the rest of the sliced green pepper on the side.

Tomorrow night is chicken marsala !

Just be sure to check the spice mix. Packaged mixes often have extra carbs and sugar. Although I'm guessing you don't get much of it per serving.

I checked the package and it had a less than 1 carb per serving which is good with me. I looked at one of the national brands and it was loaded with sugar which doesn't make sense considering it's supposed to be spicy, not sweet.

Sounds good. It's amazing how many products have added sugar, isn't it? Who wants sweet chili?

BTW, I went out for Mexican food the other night, and they served a low-carb fajita dish with big lettuce leaves instead of tortillas for wrapping. I know Atkins folks used to do the same for tacos.

I wrapped my chili in a big lettuce leaf today and made a burrito. It was good.

You could also put that beef (or chicken) taco mixture inside a big green bell pepper. I plan on making myself a stuffed pepper this weekend since my grocery store had them on sale yesterday...

What kind of lettuce is everyone using for the big leaves? Just wondering as there are so many different kinds of letttuce.

Lori, I used Romaine. The outside pieces are always a little more flexible. I'm gonna try 2 small crunchy ones today and make a sandwich.

Could we use a low fat sour cream on the "tacos" and if so how much? Shoot I bet we can't have any avacado though......

The restaurant used iceberg lettuce - the big outside leaves.

And nope, avocado would be way off-limits right now. The ff sour cream used to be allowed in small quantities (one tablespoon, maybe?), but I think it isn't anymore. So your choice.

Which Mexican restaurant? A chain or a local Arlington one? I've often thought about going to a Mexican place for tortilla-less fajitas, but I'd have to resist the chips!
