If you are looking for something to spice up your lean and green, try this sauerkraut "salad." Drain one can sauerkraut. Add 1/4 cup each green, yellow, red peppers and 1 large stalk celery. Add two teaspoons of vinegar and 2 packets Splenda.You may adjust vinegar and Splenda to taste. This keep well in the refrigerator and can be enjoyed for several meals. Goes well with pork.

Suzanne ~ The sauerkraut salad is definitely a winner... :D .....my husband just prepared a casserole dish of it and we are looking forward to dipping out the correct portion to go with our lean for a great L&G meal. You can even heat it up just like you would if you were going to have a reuben! Jules

Are the veggies cooked? What counts as a "serving" 1 1/2 c? This sounds good and I want to try it

I’d be careful with this one, Folks…

Red and yellow peppers are not on the approved list of vegetables for weight loss – just green peppers. The red and yellow are bit higher in carb count.
As far as a serving size for your sauerkraut here , I don’t wanna make a wrong guess. I'd go for the calories here - about 80 cals max.

Guest, if you are asking about the portion size for cooked vegetables on the approved vegetable list it is 1 ½ cups.

Here's the approved list again:

Alfalfa Sprouts
Asparagus
Beans (Italian, Green, Waxed)
Broccoli
Cabbage
Cauliflower
Celery
Cucumber
Eggplant
Greens (collard, turnip)
Kale
Lettuce (romaine, iceberg, bib)
Mushrooms (use in moderation on top of salad)
Onions/Peppers (green) (use in moderation on top of salad)
Radishes
Spinach
Summer Squash
Tomato
Turnips
Zucchini
