Rosemary Chicken Recipe

I had this recipe long before I started MF, but just realized it would make an ideal L & G and it's soooo good.

Rosemary Chicken

1 small onion, chopped
3 stalks celery, cut into pieces
4 chicken breasts
1 t. dry rosemary or 1 T. fresh
1/2 head cabbage, cut into wedges
4 potatoes, quartered (I leave these for my kids to have, but turnips could be easily substituted)
1/2 t. salt and pepper (or salt substitute)
1 c. tomato juice

Mix the chopped onion and celery, put 1/2 in bottom of roasting pan. Sprinkle rosemary on the chicken and place on top of the onion/celery. Place other veggies around the chicken. Sprinkle with salt and pepper and pour tomato juice over all.
Cover roasting pan and bake at 350 for 1 hour.

Kendra, are you using boneless skinless chicken breast for this or the bone in skin on? Sounds nice and easy. Thanks for sharing.

Elizabeth,

I should have mentioned that.... it's boneless skinless chicken breasts. It's very easy and yummy... was a nice taste change when I made it this week. In the future tho, I'll leave out the extra salt. I also used tomato paste mixed with some warm water instead of tomato juice, cuz I didn't have any and it worked fine.
