Roasted Ginger Salmon

Hi, Folks ~

I saw this in our local newspaper and tried it. It is yummuh.
Hope you like it, too.

Serves 4 (some for now and some for later.
I liked it cold on top of a green salad just as well as hot outta the oven.)

4 salmon filets, skin on
3 cloves of garlic, minced
1 piece of ginger root (1.5 inches long) peeled and minced
3 Tablespoons reduced sodium soy sauce
1/2 teaspoon sea salt
1 Tablespoon each: minced parsley and green onion

1.) Heat oven to 350 degrees. Place salmon in 8-inch square baking dish. Mix together garlic, ginger and soy; pour mixture over the salmon.

2.) Bake until cooked through, about 20 minutes. Sprinkle with sea salt, parsley and green onion.

Nancy's notes...I didn't have any fresh ginger so used some of that minced ginger that comes in a tube. I did not add any salt but used fresh ground pepper.

MMmmm Nancy thanks for this, it sounds delicious. I just need to get some ginger root, I'll do so next shopping trip! :D

It is really good, Pashta. I hope you find some ginger root. I really like that paste stuff. Albertson's and Safeway here carry the tubes of minced herbs - there is garlic, ginger and a few others.
