Hi- somewhere on here I was the recipe for fake mashe potatoes using cauliflower. Does anyone have it handy? I want to make some tonight with my chicken.

I found the recipe in the lean cuisine section for you. I don't know how to direct you to it so I just copied it. In the future if you click on search and put in what your looking for you can usually find it. :lol:
just wanted to mention that the South Beach Diet has a really great recipe for anyone who misses MASHED POTATOES.

Buy fresh califlower. Clean it and break it into small pieces. Steam the califlower, (I sprinkle on bullion granules during steaming) then put it in a food processor or blender and add spices until your heart is content. You can experiment with the flavor but it honestly resembles mashed potatoes.

For those on the 5&1 you can have these with your lean and green meal.

Very tasty! Even my 4 year old will eat them!

Steaming is typically done by boiling a few inches of water in the bottom of a pot with a tight fitting cover & either placing the veggies directly in the water or by placing the veggies in a steamtray just above the water & then placing a tight fitting lid (or aluminum foil - be careful not to burn yourself if you do it this way) on top of the pot. Allow the veggies to steam until they are to your desired level of doneness - usually only a few minutes.

And remember to MEASURE your Cauliflower before you mash it! Not only would you exceed the Green guidelines, but your tummy would be really really mad at you - trust me, I ate a whole batch of mashed cauliflower once... It tasted fabulous, but I was sorry all night long! :)

I don't have a steam tray, so I guess I'll try the "placing in water" method. I doubt I'll try it tonight...but maybe tommorow.

You can also steam in the microwave. I use a pyrex or corning ware dish with a lid. Just at a tablespoon or two of water, slap the lid on and steam away until it's the consistency you like.

I do this with broccoli, cauliflower, spinach, squash, zucc...etc.

It's the easy, lazy way. :D

They have a new pasta cooker out, it is a plexiglass tube that you put your pasta in and pour boiling water on it and let it sit for 10-15 minutes, works good with fresh vegetables also.

I just have a steamer. It is made by Sunbeam. It was only about $25. I have steamed all kinds of veggies, shrimp, chicken, rice (I know, not on MF), but I LOVE it.

Just buy the cauliflower already cut up and bagged. Pop a small hole(s) in it and mocrowave the bag with the holes in it. It's about 3-4 min and then it's done for ya. NO water to add in or anything. Just lay it on a plate in case water leaks out from steam

I have yet to try the mashed cauliflower(mock mashed taters) but today I did make mashed turnips(mock mashed taters)

My son was the only one who didn't like them. I peeled the turnips and cut them in cubes like I used to when making mashed potatoes. Boiled them then let them drain a good long time. I then used the mixer to smash them and added, salt, pepper and I can't believe its not butter.. I also added a teeny bit of water to make them smoother.

They tasted delicious to me and really almost identical to mashed potatoes maybe just a bit more "watery". Yum!

You can also get a little metal steamer tray for a pot at supermarkets that sell housewares. Our Raleys has them.
