I KNOW I CAN HAVE 1 1/2 COOKED VEGGIES OR 2 CUPS SALAD GREENS PLUS A 1/2 CUP "SALAD TYPE VEGGIES" FOR MY GREEN PORTION. bUT I WANT TO MAKE A "SALAD" WITH JUST CUKES, TOMATOES, AND ONIONS, (NO GREENS). hOW MUCH OF THAT CAN I HAVE TOTAL? (sorry about the caps. Had them turned on and too lazy to retype)

I would think you can have at least 2 cups maybe 2 and a half of those veggies if they are raw. I hope someone who knows more will chime in here cause right now that is sounding really good.

I asked the medifast nutritionist about how much I should eat of only cucumbers, and she said 1 1/2 cups.

Yep, onions ARE on the approved list. Also--asparagus, beans (green,waxed, italian), cauliflower, cabbage, celery, cucumber, eggplant, green peppers, greens (collard, turnip), kale, mushrooms, radishes, spinach, sprouts, summer squash, tomatoes, turnips, zucchini. Have you ever noticed that too many cucumbers make you burp? I have gotten carried away with them several times in the past (I think it was when I was pregnant & not on the program) & noticed that!

SPMustang ~

It looks like you have received your answers already here but to recap things:

Even though it seems as if we could have a larger serving of raw vegetables in place of the cooked vegetables, the portion size remains the same: 1.5 cups.

For example if you want to have only the raw vegetables you mention, you could have 1/2 cup of cukes, 1/2 cup of tomatoes and 1/2 cup of onion to make the serving size of 1 1/2 cups. Your salad sounds good and crunchy! It almost sounds like a type of salsa - ya just need a snip or two of cilantro and some garlic. Ole!

Thanks for the question. That is very good information to know for when hot weather hits and cooked vegetables don't sound as good.

Another thing to think about....cold cooked veggies are good, too. I love cold asparagus - Yummuh!

I like chopped tomaters, asparagus, green onion, two chopped hard-boiled eggs and a drizzle of vinegar...

I like to put tomatoes, onion, cukes and a fresh clove of garlic in a bath of vinegar and water and let it set in the fridge overnight. YUMMY!!

Nancy, I was actually concerned I could only have a 1/2 cup with or without the salad. It didn't sound right....and it wasn't!

For those of you with the burps from cukes, try the skinny English cucumbers. Sometimes they might also be called hydrophonic cucumbers. They are seedless and burpless! YUM!!

Oh, yeah! The English cukes are very good. The peel is never tough so I always eat it.

I also like cold green beans. I blanche them and keep them in the refer for a crunchy maintenance snack.
