Pseudo Vichyssoise (Hot or Cold)

Or, in english, yummy potato soup. :D

I can't believe how close this tastes to the real thing.

In a blender mix a chicken fast soup or 1 cup of chicken bouillon. Add about 1 C of very well cooked cauliflower and about a TBS of chopped green onion or shallots (shallots taste the best). Puree for about a minute. Chill for about an hour, or if you prefer it hot, enjoy right away (you may need to nuke it for a minute to get it really hot again). Garnish with thin slices of green onion if you like.


This usually makes enough for 2 servings, it's very filling. Left overs can be refrigerated for a couple of days.

If you use shallots instead of green onion, you'll get the garlic flavour without the garlic breath. :)

How do you count this? It's not a lean and green, but it's got a cup o' veggies.

I'd have it with a serving of lean and a sliced cucumber or other raw veggies and count it as the Lean and Green.

It would be a perfect maintenance snack or meal with added protein.
