Aphreal, I made four of them at one time and throughout the day they got progressively more soy tasting and went from nice fluffy muffins to rubber hockey pucks. I wouldnt suggest it :P

hmmm rubber hocky pucks, that is um so yummy... or not. Oh well I will have to save it for a special treat when I have the time to wait for one to bake.

Would they keep any better in the fridge?

Would the rubbery hockey puck go well with a cup of coffee??

There's a recipe on the box of the Peach oatmeal. I know for the cookies (recipe on the Apple Cinnamon oatmeal box), I added pumpkin pie spice plus extra cinnamon. I like cinnamon, but I REALLY like it along side some clove, ginger, nutmeg...

Diana, the one on the box is the recipe I modified slightly to make in the corning ware dish. i have found that if i use 1/4c water it is like a bread pudding consistency and if I use 1/3c water it is more like a muffin in texture.

I agree with everyone -- these taste much better hot out of the oven with a nice cup of tea.

I make mine in the mini loaf pans and stretch the "batter" out to make three loafs. I like mine to be crispy and this accomplishes it. My absolute favorite is the french vanilla berry oatmeal made this way. They taste like little blueberry muffin loaves. -- Be careful when using the berry oatmeal though, you have to let the batter sit a good ten minutes first to allow the berries to come back to life. If not -- a bit too crunchy of a result.

ABSOLUTELY!!!!

I like them so much I've used up all of my oatmeal for this month. :oops: I had only purchased based on eating one oatmeal per day ... but found that I've had several days of two oatmeals. So now I have to wait until my April autoship to have my little oatmeal loaf treats. But you know that I certainly ordered extra for my April shipment!

BTW - I have also tried adding some raspberry davinci syrup to the maple and brown sugar oatmeal recipe to give it a bit of a berry flavor. I enjoyed that as well!

MMM ... I used the peach oatmeal with 1/3 cup water and baked for 25 minutes. It's really good.
