Oatmeal pancakes - baked in syrup

Postby just_julie » May 2nd, 2006, 9:13 am

Just wanted to share a tip. I routinely make pancakes out of my Maple Oatmeal - just like the cookie recipe only with more water. I bought some Walden Farms syrup, but it has a weird bite to every... bite. It makes me pucker with each taste, but the after taste is good - like regular syrup. I always end up with a lot left on my plate no matter how little I try to use.

THEN I decided to put just a tablespoon of it in my pancake mix before I baked them. Now my pancakes have a nice maple flavor without the bite, pucker, wasted product, or mess. I just squirt some I Can't Believe It's Not Butter on, and my pancake breakfast is portable. :flip:

I actually like the Walden Farms syrup a lot. I think it's the best tasting product that they have.

Hey Julie, Could you please give me your recipe for the pancakes so I don't have to look all over. Thanks.

1 pkt Medifast Maple & Brown Sugar Oatmeal
¼ tsp cinnamon (or more)
2-3 packets Splenda sweetener (I prefer 1 packet)
1 Tablespoon Walden Farms syrup
1/3 cup water (more for pancakes, but add your syrup first)
1/8 tsp baking powder
½ tsp vanilla extract

Pre-heat oven to 350°.

Mix all dry ingredients together. Add extract, syrup and water.
Stir until moistened. Should be runny.

Bake 10 minutes. Sometimes I flip mine and bake a couple more minutes depending on how wet/dry they look.
