Summer treat

An idea for a hot summer day...

We own a gourmet coffee and shaved ice business and one of my favorite treats is a sugar free shaved ice. The SF syrup we use has no carbs or calories- and it is really strong in flavor.

If you haven't tried shaved ice....we call it "snow"...it is much better than your normal snow cone. A fruity one is the consistency of sorbet. M-m-m-m.

If you were not ...

Homemade chicken soup?

Does anyone see any reason why I could not have homemade chicken soup and a side of cooked veggies for dinner?

I would make it with chicken broth, fresh chicken parts, celery, parsley and onions (and I will eat 7 ounces of the white meat cooked chicken).

Is that wrong?

Lemon Ginger Grilled Chicken

This may be my favorite recipe for grilled chicken. I think it is compliant, especially since you don't really "eat" the marinade. Someone, please, let me know if it's not!

4T lemon zest
2/3 c. lemon juice
4t ginger, peeled & minced
4t brown sugar(substitute splenda)
1Tpeanut oil
1T salt
dried chili peppers, as desired(bottled hot sauce is fine)
Marinate chicken 12-24 hours, grill, enjoy!!

I usually scrape away the lemon zest & ginger before ...

Toasted Turnip Chips

I think I was inspired to try this by something I read in here a while ago, but I made these tonight and they were delicious!

3 smallish turnips, peeled and sliced 1/4" thick (looked like 1 1/2 cups to me)
Spread out on a baking sheet and lightly spray with olive oil spray.
Sprinkle with garlic salt and fresh ground black pepper.
Bake at 425 for 10 minutes, flip over, bake another 5 minutes. ...

Branching out

OK, I FINALLY got a little tired of grilled chicken and steak and fish, with the occasional lamb thrown in as a treat. So this week I made low-carb, low-fat chicken parmesan (chicken breast, low-sugar pasta sauce, fat-free mozzarella, baked in the oven). Yummmm.

And yesterday I finally found low-fat and fat-free feta, which the store closest to me at the old house didn't carry. So I picked up some egg substitute, and this weekend ...

Turkey sausage-I've found a LEGAL alternative!

Medifast said they do not recommend turkey sausage probably because of added sugars!

Well.....

I've found an alternative---MAKE YOUR OWN!!!

Start by adding 1/4 tsp EACH fennel seeds and dried sage to
1 pound ground turkey BREAST meat.

Make into patties. Fry in H20 & freeze in individual patties.

Voila! Homemade "sausage"

If you like 'em hot (like me) add red pepper flakes.
Like maple flavoring? Add some Da Vinci SF Maple syrup.

I make ...

diabetes pudding? knox gelatine?

I was thinking of adding 1/2 packet of knox gelatine and my diabetes shake mix to 3/4 cup of boiling water to make pudding. That would add 10 calories and 0 carbs. Would this be approved?
