Muffins .... uh.... I think!!

OMG!!!
I thought I'd make up a few packages of muffins from the Peach oatmeal that I just can't eat as oatmeal....

Gave myself plentya time....started at 8pm last night.
OOOoooopppppss -
I added 3/4 c. water per pkg....grrrrrr...
....lets add another 2 pkgs......

Add MORE cinnamon....
Add more baking powder......
Add more splenda.......
Put in mini muffin tins......
Bake 12 min......
look like mini hockey pucks.......
won't come outta the darn pan......
finally get them out.....not completely cooked even tho the knife came out clean.....
put em in another 5 min....
another 5 min....
another 5 min.....
hmmmm......
this should do.....

Well - they are much better than the oatmeal plain
and I did freeze them.

BUT it was 10:30 by the time I 'tweaked' the baking.
O lawdy - good thing I have a sense of humor.
My DH thought I was looped.
and no - no alcohol was consumed during the making of the muffins.

Just tho't I'd share.

BTW - anyone have a kick a$$ muffin recipe???? 8)

I make my muffins in little 7 oz pyrex cups using the cookie recipe on the outside of the apple cinnamon box - cook for about 25-30 minutes at 350.

A good sense of humer always helps, lol.

Go to the Lean Cuisine section to find all kinds of recipes for muffins.

I just follow the one on the box I think. 1 packet of oatmeal... but can't handle the Peach. 3 packets splenda. 1/2 C water. Dash of cinnamon. Dash of vanilla. 1/8 t. baking powder.
Let sit for 5 minutes before dividing up into the mini muffin pan which is coated with cooking spray.
Cook 350 degrees for 10 min.
I've never had a problem, but not all ovens are created equally.
I think the key is to let them sit for 5 minutes.
Pre WLS 460
Low after WLS 300
Start of MF 350
Previous MF low 280
Restart MF 330

Thats why I made the muffins with the peach --- added enough cinnamon to hide the peach flavor! next time I might try pumpkin pie spice!! :lol:

BTW - I saw the great muffin recipes AFTER I had my own little fiasco.
