Hiya all, :chef:

I was inspired by Supermom's lemon tart recipe! I took her crust recipe & used it in a "mock chocolate cheesecake"... Just made this for my dinner - YUM!

This uses 2 meal replacements! Be sure to eat only 1/2 for your serving :)

It's been about 20 minutes since I ate my 1/2 w/ a cup of warm tea, btw, and I am literally stuffed - VERY filling! Kind-of high-maintenance prep work, but big payoff in feeling full & tastes great!

MediChocoCheesecake

Supermom's Crust:
1 packet oatmeal (flavor of your choice--I used cinamon)
3 sprays ICBINB spray
1 TB water
1 packet splenda

Mix all together. The mixture should be crumbly like a graham cracker crust. Spray a 6 inch tart pan (or 6 mini tart cups), or whatever type pan you have with nonstick spray. Press the mixture in bottom and up sides of pan. Bake for 10-12 minutes in a 375 degree oven. Watch it---you don't want it to burn. Let the crust cool completely.

Cheesecake Filling:
1 packet chocolate pudding
1/8 tsp lemon extract (or any favorite flavor extract, but the lemon gives just enough "tang" to make it taste a bit more like a cheesecake)
1/2 tsp vanilla extract
1-2 tsp. Splenda

Prepare pudding per packet instructions, only add the Splenda, lemon & vanilla extracts to the water *before* mixing in your packet.

Fill crust and chill for 15-20 minutes.

Enjoy!

MMMMMM! But, does MF have a vanilla pudding and I have missed it? Or, are you using banana?

I think I missed something? Where is the vanilla pudding from? I only have chocolate and banana. :scratchhead:

WOOPSIE-DAISIES!!! :oops:

Just went back to check, and sure enough, the vanilla pudding I used was leftover from a "doctor provided" brand that is similar to MF in all calorie/carb/protien counts, but is not MF (& insanely more expensive, btw). Oy - so sorry! I have just a few of these, and they are in the same pantry drawer w/ my MF packets. :roll:

Substituting the chocolate here would be a DELISH chocolate cheesecake!!! :D And I bet ya the banana would be awesome too! Gonna have to try that today 8)

This brings up an interesting point. WHY DOESN'T MEDIFAST HAVE A VANILLA PUDDING?????

On the mymedifast board, there is a new product suggestion area...both butterscotch and lemon (and vanilla, too) were suggested with many replies to the idea
Don't really care as long as everything's better than yesterday was...
