Lemon Tart

I made this this morning. It was pretty good.

Filling:
1 packet Vanilla Shake
2 cups cold water
1 individual packet crystal light lemonade (the packets made for water bottles)
Lots of Ice

Put all in blender. Blend until thick and creamy.

Crust:
1 packet oatmeal (flavor of your choice--I used cinamon)
3 sprays ICBINB spray
1 TB water
1 packet splenda

Mix all together. The mixture should be crumbly like a graham cracker crust. Spray a 6 inch tart pan (or 6 mini tart cups), or whatever type pan you have with nonstick spray. Press the mixture in bottom and up sides of pan. Bake for 10-12 minutes in a 375 degree oven. Watch it---you don't want it to burn. Let the crust cool completely. Fill with the lemon filling. Put in freezer and allow to freeze completely.

Since this is made with a shake and an oatmeal, I figure it would be two meals. So, 1/2 of whatever you make would be one serving. It tasted like a lemonade icebox pie, for those of you who have had that.

sounds delicious! I make my vanilla shakes that way with lots of ice and it tastes like pie so I am sure this is even better.

So is it really crispy? I've found that the oatmeal is always spongy when I cook it.

I would love to find a way to just make the oatmeal really crispy.

As long as you don't put in too much water, it will be fine. Not super crispy, but more like the crust of a cheesecake. It should just be moist and crumbly when you pat it into the pan. It will almost look like cracker crumbs. If you get too much water, though, it will be a spongy, icky mess, and you will hate me for helping you to waste 2 supplements!!
