Lemon Ginger Grilled Chicken

This may be my favorite recipe for grilled chicken. I think it is compliant, especially since you don't really "eat" the marinade. Someone, please, let me know if it's not!

4T lemon zest
2/3 c. lemon juice
4t ginger, peeled & minced
4t brown sugar(substitute splenda)
1Tpeanut oil
1T salt
dried chili peppers, as desired(bottled hot sauce is fine)
Marinate chicken 12-24 hours, grill, enjoy!!


I usually scrape away the lemon zest & ginger before grilling, they tend to burn. Can use boneless thighs (for the family...) or breasts. I've never tried this on pork, but bet it'd be good. This will make marinade for 3# of chicken.
