Lemon Chicken - FABULOUS

This is my favorite Lemon Chicken recipe which I made last night. It is from the Barefoot Contessa and has virtually no carbs. I KNOW - tons of olive oil - but just shook the chicken off before I grilled it and was sure my "green" was asparagus cooked in a skillet with water and beef bullion cubes and no added fat or calories- figured whatever was left was equivalent to a couple of teaspoons of full fat salad dressing.

It is really really good - hubby and 3 boys under 6 all love it.

It needs to marinate overnight or for at least 6 hours but it really is the best chicken I have ever put in my mouth . . . plus it is super easy - just dump it all in a ziploc and put it in the fridge.

Barefoot Contessa Lemon Chicken

3/4 c. olive oil
3/4 c. lemon juice
2 t. salt
1 t. black pepper
1/2 t. thyme
2 pounds bonless skinless chicken breasts (or sometimes I use skinless bone in breasts)

* plenty of marinade to marinate even more chicken if you wish

Combine marinade ingredients and marinate 6 hours or overnight.

Grill breasts 10-12 minutes or until cooked through.

Sounds great and something for the family and me too!

Saw a condiment listing on this site and can't imagine that whatever is left on the chicken exceeds the olive oil or lemon juice allowed for the day so should be perfectly on plan I would think.
