LEGAL Tuna noodle casserole???

Okay... for all you 'gourmet's' out there... i was thinking of trying to concoct some kind of legal tuna noodle casserole using tuna, shirataki noodles, little bit of ff cheese for base.... any suggestions? maybe figure out what amounts of each would be legal for a l&G and mix w/ some seasonings and use MF crackers for bread crumbs and bake?

Hmm, never thought of that. I usually just have the noodles mixed veggies.
Given that they are low carb (3 per serving) and low protein (1 per serving) they really don't do much nutriionally, but....how about this.

2- 3 oz cans tuna (slightly less than 1 protein)
1 egg (1/2 protein)
1/2 C lf or ff cheese (1/2 protein)
1 package shirataki noodles (very little protein)
1 stalk celery
1/4 C onion
salt (or substitute)
pepper
1 package medifast crackers

Rinse noodles to get rid of the liquid they have been in. Chop celery and mix with 1/4 C chopped onion. Combine in a bowl with tuna and cheese. Add spices.

Press into small baking dish. Sprinkle with cracker crumbs. Bake at 350 for 20 minutes or so (just a guess).

2 servings

You would need to have a salad or mixed veggies with this for the rest of the green.

See if this works, never tried it, just using my own experiences with tuna. Let me know, I might try it out.

Okay, Mike.... i tried it. It ended up being REALLY good! I had to make a few changes:

with your suggestion: I drained the tuna. Rinsed the noodles. mixed the tuna w/ cheese ( i had lf and ff mozz so i mixed that up for a 1/2 c worth....) add celery, red onion, salt and pepper. A little bit of garlic. added noodles and one slightly beaten egg. mixed it all together and pressed into a greased (sprayed) 8x8 (?) pan. baked at 350 15 minutes... was still kind of 'runny'. i tried to drain a little of it and added a *pinch* of flour to soak up the egg mix... sprinkled the broken MF crackers and a little bit ff cheese and sprinkled with paprika. baked another 5-10 minutes.

At first it was a little dull. BUT i added a few tabasco drops and more s&p.. still missing something. I sprinkled w/ the molly mccheese and WHA-Lah!!!! It was good. Since it made 2 servings i had one, and gave Mikaela half of the other half.... she wanted seconds! so not bad!

The crackers and celery/onion mix gave it the crunch, the shirataki noodles gave it the texture of spaghetti noodles, and the molly mccheese gave it the cheesy taste! and of course, the tuna tasted like tuna :) Served w/ brocolli on the side. :bib: YUM YUM.

Very good. I may try it. Have to go to Safeway for the Shirataki noodles as Raleys doesn't seem to carry them and nobody I have spoken to there has ever heard of them. Safeway has little bags of them already soaked in liquid, so all you have to do is rinse and add to the food.

Glad it was good... I always try to spice things up pretty well. Celery salt and a dash of Grandmas might help also.

It annoys me no end that my Safeway does not sell them. I have to go to the Asian marlet for them. I am gonna try that out, too. Tuna and I go together like PB and J!
Don't really care as long as everything's better than yesterday was...

That sucks. In the Safeway here they are in the salad section (cooler), where they keep the Tofu and stuff cold.

Finally made this. Since QT said hers was a bit watery, I cooked the veggies a bit to rid them of excess water.
It was yummy, although I think I added a little too much Mrs. Dash (was a little salty).
