I buy cases of water at Costco. I can only stand spring water, not even the stuff labeled drinking water. So I buy two cases a week. That's my version of weightlifting, for now.
The way I remember to eat is to plan out my times at the beginning of the day, starting with whenever I eat breakfast. Then, if you need to, maybe you could set a little alarm or something?
I have a cooler that holds my dinner and supplements, plus several bottles of water. I bring it to work so I can drink my bottles all night long. It's a pain to lug it around every night, but hey, more weightlifting.
I don't know if this will help at all, but it works for me.
