Homestyle chili question

Postby upheldwill » February 21st, 2006, 6:29 pm

I had the homestyle chili yesterday and today and both times I ended up eating it as soup...the first time I followed the instructions on the box and the second I mixed it with 4 oz. of water last night and let it sit all night then added 2 oz. hot water and heated it on the stove, I let it sit for a bit but it still did not thicken :(
Am I doing something wrong? I would appreciate any help. Thanks

Michelle

I have found that if you just use 4oz water, some chili powder, onion powder, and I add 1/2 tsp of chili base from Better Than Bouillon and then cook it on the stove top on med low for about 15-20 min and it gets really thick that way

I love the chili - the first two times I also ate soup though!! The chili is what keeps me sane and makes me feel like I get another 'meal'!!

I use only 4oz water and let it soak for about an hour before I'm ready - if I don't have time for that then I soak at least 15 mins. This softens the beans. I use Chili powder and red pepper flakes (sparingly - don't want to scorch myself!) and then I nuke it about 1.5 mins (90seconds) - and then stir in some salsa. then I crumble up my one daily pack of crackers (the medifast ones) into the chili and it's nice and thick and flavorfull.

I did add a teaspoon of fat free sour cream a few times when I was doing the complete diet due to time crunches - I think that might have been a no no but it was oOOOOH so good!! LOL ANyway - I do love the chili!

Cheers!

Okay all you great cooks,

I will add my version of the chili, which I love most of all!

The night before I want the chili, I get my trusty little pan out...pour packet into the pan with 1 to 1-1/2 cups cool water, add some diced tomatos or salsa, chili powder, cumin, boullion cube and whatever else I want to season it. Cover the pan and refrigerate over night. It softens the beans just right.

About a half hour before I want to eat it, I bring it to a boil, and simmer it until it thickens. It makes a bowl full and is it ever delish!

Of course I must have my crackers with it and I am set! I also do the minestrone much the same way. I soften the chicken/brown rice overnight, also.

I love all the recipes I get from the boards....and I love you all too!

I just can't get over the amount of effort you ladies put into your meals! I am truly impressed, and totally amazed...

I have said this in the past, but I put as little effort as possible into MF preparation. I dump it in a mug, and pour some instant hot on it, and hope for the best! :-)

Sometimes, if I am feeling *really* inspired, I will add Mrs. Dash and Pepper and Onion Powder...but that's the most that will happen!

I know, I know, typical young woman living in NYC apartment not wanting to cook. But I swear, I really can cook, I just think it's torture to spend time cooking when the actual eating of the meal will take 1/4 of the time it took to cook it!

You all must really like to cook! haha

Oooh, Vicky, I can do you one better on the lazy front...

Being at work is easy because I either have an RTD or throw an oatmeal or creamy chicken soup into a cup and add hot water from the water cooler (I don't require it steamy). It goes in a plastic cup with a plastic spoon, and then I just chuck them when I am done.

Well...I realized how lovely and easy it is, so I actually bought a bunch of paper cups and plastic spoons for home, on those days when I just can't stand to wash the mug and spoon over and over! It doesn't make sense to put it in the dishwasher, because, to be honest, very few dishes each week are being used, and I am not going to run an empty dishwasher...so then I keep using and washing the same spoon and mug - well, it started getting old! :-) Yes, this is shameful, my mom would kill me! haha

Like I've said a million times, I treat this as fuel, get it in and move on to my next activity....

I did, however, recently finish renovating my whole apartment, and have a gorgeous new kitchen - what a pity the oven and stove are collecting a bit of dust!

Let's see, you could use your oven to store extra linens and you could use the dishwasher as a clothes hamper.

I have always lived by the 4 ingredient rule. More than that is way too much trouble and with MF I think it's more like the 2 ingredient rule and that includes water!
