Granola Recipe YUM YUM

I came up with this granola recipe to help with the crunchy munchies (1 pack of MF crackers just doesn't cut it). Recipe looks long but I was very specific for the non-cooks out there :)

Take 1 pack of oatmeal (I use Maple) mix in a generous pinch of salt and a few good shakes of cinnamom. Add to your taste, you could also add nutmeg if you like. Slowly add just enough liquid ( water &/or SF syrup) so that the mixture clings together and leaves the side of the bowl as you stir it. (like a really stiff cookie batter) Let sit for a few minutes so it fully absorbs the liquid. Remove from the bowl and knead it a few times in your hands. Pinch off small granola sized pieces and put onto a baking pan sprayed with a Pam-type product. (I also line the pan first with parchment paper) After you get all the mixture on the pan, spray it with a few pumps of "I can't believe it's not butter." Bake at 375 for about 10 minutes. Stir. Break apart any large pieces that are still soft in the center and stir again. Place pan back in the oven and continue baking until crisp and hard. (depending on the size of your pieces maybe another 5-10 minutes) Remove from the oven, cool and enjoy!

I tried this and they were...well different. They weren't bad and I could see myself baking batches of these to take on the go like Musicalmomma sauggested instead of a bar. Give them a shot it was nice to have something crunchy

I haven't tried the oatmeal yet, but this sounds like exactly what I have been looking for. I'm going to the movies soon and couldn't decide what to snack on. Thanks for the recipe!

I am intrigued and really want to try but I'm a little cooking-challenged at times. It looks like mix everything up and then make little pieces and bake on a cookie sheet. Then it says to take them out of the oven and stir and re-bake. I'm a little confused. Why would you stir little bits of granola on a flat pan? Can you just bake them one time?

When baking "dishes" with small pieces like this granola (or in a previously life, chex mix with extra cheerios *whimper*), you want to stir it up to ensure even baking, and it only takes a minute to do :)
You probably could just bake it once - while you'll run the risk of burning some pieces & potentially undercooking others, it might turn out perfectly :)

Yes, they are a Little different as someone mentioned. Kinda like eating a large rabbit-food pellet or a gigantic Grapenut. :lol: BUT---they are sweet, crunchy and filling. I use part water and part SF Hazelnut syrup so they have a slightly sweeter taste.

Loved this! Thank you! I wasn't really fond of the cookie texture, but I would make them for when I wanted portable oatmeal. Sometimes I'd just take my regularly cooked mug of oatmeal in the car with me, and when I didn't have a place to rinse out my cup - YUCK! My car stank!

Anyway... I made 2 batches. One with just a packet of Splenda and cinnamon, and one with Splenda and a combination of SF syrups. The first was great! Haven't eaten the 2nd batch yet.

I cooked mine for about 18 minutes after the first 5 minutes and stirring. It needed that much time to get extra crunchy. The browning helped with the flavor too, IMHO.

I love this recipe. I have used apple cinny and the vanilla berry oatmeal and have love the crunchyness of these. Perfect for when I eat my last supplement watching tv. I dont use the salt. I like mine more sweet flavored.
