The Essential 1 Chicken Salad and the Essential 1 Tuna salad are already prepared with light mayo and spices so there is no need to add any more fat. Just add a small green salad or greens and a 1.5 cup serving of cooked non-starchy vegetables and you are good to go.
Yes, egg substitues and eggs can be used as part of the 5 and 1 plan for the protein portion. A person can use 1/2 c of egg substitute, 2 egg whites, or 2 whole eggs.
If you are having two full eggs a day don't do this more than 2-3 times a week because of the cholesterol level and slightly higher carbohydrate level.
