Excited about salad

Postby bokkie » February 13th, 2006, 2:42 pm

I have never really liked salad but since I work 24 hour shifts and cannot cook, I have been packing salads. I have found that if i put veggies that i do like, i look forward to my salad all day long and it is very satisfying when i finally eat it. I like to put lots of grilled stuff like zuccini, bell pepper, eggplant, and onion.

Does anyone else have any really good salad suggestions?

Can I include pine nuts in my salad?

Can I use lemon juice insted of dressing?

Salad is quickly becoming my fav too! I use Walden Farms dressing which has no carbs or fat and is really good too. I know that lemon juice has some carbs in it but I don't think a little is bad. Are you putting 7oz of chicken in it or are you having some other legal protein with your meal? This is important so that the balance is maintained.

I do put 7oz of chicken in but sometimes i am just not hungry enough to eat that much. What other proteins are legal?

lean meat

Hi there,
Any lean meat is fine. You could try 7 oz of shrimp or a combo of meats. The pine nuts are toooo fatty. A little lemon juice is fine. As Lisa said the Walden farms dressing are great. Make sure and get in your meat -- you need it for the balance. Sometimes I fry very lean hamburger with taco seasoning to make a taco salad. The MF crackers work fine as chips.

But if you have beef or pork or lamb, make sure you have 5 ounces instead of 7.

Eagle Eye

Oh my Goodness,
That eagle eyed dogma caught me. She's right please limit other meats -- other than chicken or fish to 5 oz. Look how smart she is -- no wonder she's doing soooo great parting with the pounds. :D
