Eggplant anyone?

Eggplant seems to be one of those veggies that people love or hate. Lucky me, I love it! I was craving it recently, so I picked up some Japanese Eggplant, which tends to be smaller and have a slightly different/more mild taste.

Some MF safe recipes (I hope):

1- Slice into 1/2 inch rounds. Salt and pepper both sides and add any other seasonings (garlic powder, italian seasoning, etc). Spray a pan with Pam and then place rounds into HOT pan. When brown on one side, turn and brown on other. Eat right away.

2- Chop into 1/4 inch cubes, leaving the skin on. Chop a small amount of onion and add to hot pan sprayed with Pam. Allow to sweat just a bit. Pepper the eggplant cubes, add other seasonings. I chose garlic and herb seasoning. Add to the pan and start to brown the cubes. Straight into the pan, add soy sauce (a couple good glugs), lemon or lime juice (tbspn or so), hot sauce (I use siracha, do it to taste), and a packet or two of splenda. Mix well, and eat right away once it is all heated through. The eggplant will absorb the liquid. It is garlicky, spicey and a touch sweet. Eat with a lean pork or throw some shrimp into the pan too, for a 1 pan dinner.

I slice the eggplant and brown it. While it's browning I open a can of roasted cut up tomatoes, directly into the can I put one or two splenda packets. Mix it. I spray a small casserole dish with pam. Spoon a little of the tomato mixture in dish, lay slices on top and top with more tomato. Warm in the oven. Very tasty!!

This sounds good. I haven't really eaten much eggplant in my lifetime. It must be one of those things that grandmothers must prepare and pass on down the line.

I never had an Italian grandma to teach my Mama to make lasagna, spaghetti and eggplant dishes. My Mom made fried chicken and roast beef with gravy (of course!), salisbury steak, potato and macaroni salad, fried tomatoes and potatoes, biscuits, pies, and the cookie jar was always filled with fresh-baked cookies. I would have been better off if my Mom had just made green salad and baked talapia!

I know, I know, this is a very old post revisited. I have never cooked eggplant, but I do enjoy it when I have had it in restaurants. Of course, then it was smothered in cheese and sauce! Any other recipes and ways of preparation would be very helpful. Hubbie and I are trying to mix up what we are eating. Hubbie also wanted to try turnips. Another new vegetable I have never prepared so any thoughts would be appreciated.

I love my mom very much, but she was the worst cook!

I slice eggplant into rounds, marinate it briefly (or just put some olive oil spray and seasonings on it) and grill it.

Turnips can be boiled and mashed like potatoes. They have a bit more bite, but I like 'em. I think you can also roast 'em like other root vegetables. That oughta make 'em nice and sweet and caramelized.

Super idea for boiling/steaming and mashing turnips - I like them very much. Turnips are great on the grill and eaten raw, too. I think they taste like 'smoke' raw.

Is there a way to give it less of a "spongy" taste? Maybe when I sauteed it, I didn't leave it in long enough?

If it was spongy then you probably didn't cook it long enough. A quick way to cook veggies is to cover them after sauteeing them for a little while.
