Creamy taco soup

Postby Diet Diva » July 6th, 2005, 3:15 pm

Hello folks,

I have a new favorite that I want to share. You know, back in the old day (pre-mfast) I used to love Taco Bell...and now that my double decker taco supreme days are over I've convinced myself that my version of this Medifast creamy chicken soup is just as satisfying as my former midnight trips thru that addictive taco shack drive thru:

Try it--I hope you enjoy!
Oh...hint: for best results make this way ahead of time, let it sit and soak so all the ingredients get smooshy and soft...It's not really a grab it-n- go, but worth the effort.

1 pkg Chicken and wild rice MF soup
8oz hot water
1 T dried parsley
chili flakes/thick taco hot sauce to taste--I like lots!
2 tsp. chicken bouillon
salt/pepper to taste
1 celery stalk finely chopped/pinch of dried onion flakes

mix/ microwave for s couple of minutes and then let sit for several hours....I keep mine in the fridge.
Then, when you're ready to eat, and while the soup is still cold, blend in your magic bullet. Then heat up and top with a pinch of freshly chopped cilantro.

If I were on maintenance, I would enjoy this with a dollop of FF sour cream and 1/2 of a whole wheat tortilla.

The soup ends up being so creamy and thick it's almost as good as a taco! It's the medifast taco bell alternative! There's no need to follow that cute little chihuahua to that drive-thru anymore!

Bon apetit!

I love Taco Bell. I know its pretty much lettuce in a shell & if you are lucky you get a little meat  but I do like it.

Actually, a little fat-free sour cream is allowed, according to the list of foods that can be added. That'll bring you even closer to the Taco Bell taste.

Diet Diva ~

This is awesome! I didn't send my soup for a ride in the Magic Bullet Train like your recipe calls for but it is very very good - great flavors and the aroma is divine! Only problem...there was an annoying little chihuahua circling our yard...
