Cottage cheese recipe

Here's a recipe I like to use when I'm a little tired of meat:

3/4-1 cup low fat cottage cheese
1-2 slices tomato diced
1-2 slices onion diced
1-2 slices green pepper diced
salt/pepper to taste

When I first heard of this recipe, I thought it sounded terrible, but I tried it and loved it. It's very crunchy for those of you who miss crunching. If you try it, let me know what you think.

I have been eating the cottage cheese with the chopped veggies and it is delicious. I get sick of meat all the time and it is such a great change.Thanks! I tried the low fat whipped cottage cheese, veggies, and a bit of dressing drizzled on it. It's good!
