Chocolate and...

Postby sidrah » January 16th, 2006, 1:58 pm

You know I see people commenting on adding cold coffee or hot coffee to chocoloate. I have been a cook all my life and it is true, coffee brings out the flavor in chocolate. Problem is I hate coffee- flavor, smell, all of it....

Just wanted to throw this out for people who are not of the culinary mind-
Adding cinnamon will give chocolate the same effect, as will adding a small amount of chile peppers ground up. Dried ancho chile is the best I have found. I do both for my hot chocolate and the taste is much stronger than just plain chocolate. Steeped orange peel is similar, too, but I ran out of it and if you go overbaord, it tastes too strong. I just mix it into the chocolate powder and then add the hot water...

Hi, Sidrah,
The spices that you are recommending sound so great! I will try that!
Thanks,
Lan

I love chocolate and cinnamon, and I make my cocoa that way a lot. Although right now I'm obsessed by hot cocoa with hazelnut syrup. What a combination!

I don't think I have ever had hazelnut syrup in anything. I might try it if I can find a small bottle. I bought so many bottles of fruity flavored stuff when DaVinci had a good sale and now I wish I had some new flavors.
I have watermelon, lime, cherry, fruity stuff. I think maybe coconut is somewhere in there, hmmmm

I just bought two big bottles at TJ Maxx, but I had a little teeny bottle of it that I got a long time ago, and I wish I knew where I'd gotten it. The little bottles make it a LOT easier to try out new flavors.
