Chili/Cream of Broccoli

Hi...can anyone post the preparation directions for the Chili and Cream of Broccoli? I "inherited" a friend's stash and she threw out the boxes with the directions on them.

Cream of broccoli is easy, just add powder to a bowl with as much water as you want (about 1/2 cup )and microwave for about a minute. Stir. Just dont let it boil or it gets oddly chunky. The official instructions say to ADD hot water to the bowl of powder, stir and wait. My version is easier.

The chili is a bit more complicated. The "official" instructions claim that you must mix 1/2 cup of water with chili mix in bowl and stir. Good so far. Then it says to microwave for 2 1/2 minutes. That is too much for my microwave and it boils over. I do it in 35-45 second increments, stirring in between. I do that 4 times or so. Then, the directions say to let stand for 1 minute. I do so, but COVER it while I let it stand. Then microwave again per the official instructions for 1 minute. Let stand for desired thickness (or what they should say is so it won't be crunchy!). (Again, I cover it.) If you want to doctor it, add your stuff after you microwave the first time.

I use a whole cup of water with my broccoli soup. I nuke the water, then add a little to the powder and stir to make a paste, then add the rest of the water.

For the chili, I still think unless you're going to make it on the stovetop, it really should be mixed ahead of time and left in the fridge so the beans will soften. (I add some cumin and Better Than Bouillon chili mix, plus about 5 ounces of water to the powder and stick it in the fridge for at least a few hours, then nuke for 2 minutes.)

And biki, can't you just put it in a bigger bowl to keep it from boiling over???

I prefer to cook it in increments and stir, evenly distributing the heat. That way my beans are cooked without overnight soaking.

Personally, for the chili, I add the water and let it sit for an hour so the beans will rehydrate. Then nuke it for a minute and its good. I also tend to add a dash of garlic and chili powder. :mrgreen:

Thanks Mike for the chili advice. I have been using salsa as suggested and now find it quite good. And I like your cooking tip better. Will give it a try.
