Chicken Marco Polo

Tonite I made Low Fat Chicken Marco Polo.

6 Ounce Chicken breast (beat it as thin and flat as you can get it)
1.5 Ounce finely diced lean ham
Chopped Brocoli (It is Impossible to get your whole veggie serving in the breast, so measure out your 2 cups, get what you can in, and steam the rest for a side dish)
1 slice Kraft American Cheese--the lowfat, of course!!
The following to taste:
Onion Powder
Garlic Powder
White Pepper
Salt
Mrs. Dash
(You can really use any of your favorite seasonings)

Put the slice of cheese on top of the breast
Sprinkle the ham on top of the cheese
Sprinkle some of the brocoli on the Ham
Season as desired
Roll the breast around the filling
Secure with a toothpick (it might take a couple)

Spray the breast generously with ICBINB Spray

Roll the breast in Finely grated MF crackers (Whatever flavor you desire)

Spray a baking sheet with non stick spray (I use Mazola Extra Virgin Olive Oil Spray--It is like Pam, only tastes much better--has no alcohol or silicon)

Put the breast on the sheet and cover with foil. Bake at 350 for about 20 minutes. The cooking time will vary from oven to oven, and also depending on how much you beat the breast out. Uncover and bake an additional 5 minutes or so.....be careful to not let the crackers burn!!

It was really good. My whole family liked it. Even my husband, who is ANTI CHICKEN ate it and didn't complain.

Hey Supermom, just wanted to say that you are so creative! I really enjoy the recipes that you contribute. You must be a wonderful cook. Just one question about the ham. Did you use ham that you get in the deli section of the grocery store or packaged ham? :flip:

Well, actually I used ham that was raised on my parent's farm. But, you could use Deli ham or packaged ham. The Corn King ham is relatively inexpensive and It is good hot or cold. You can get it 98% fat free. a 5 pound ham usually runs about 9 bucks around here! If you used the deli ham, though, you could have it shaved in the deli, and just lay about 3 or 4 "shaves" of ham across the breast.
