Being an 8th grade science teacher.. I teach with food. When covering acids and bases, I teach about acid cooking... so we make Seviché. The kids love it and they learn.
Given that the fish is soaked in citrus juice, there is of course some carbs from that, but not anything more than what is left in the fish or shrimp from the acid cooking.
For the L&G I would make sure that you get enough veggies in though.. might want a small side salad too.
