Broccoli Slaw

Next time you are at the grocery store, pay attention to the area that usually has the prepackaged lettuce and slaws. At my grocery store they offer a pre-packaged broccoli slaw. It is just the broccoli, no dressing, so you can do whatever you want with it. The options for this simple veggie are limitless.

What to do with it?

Steam it like you would regular broccoli. Add a squeeze of lemon juice and salt and pepper. Serve with fish. Or for an all-in-one, create a foil pouch. Lay down a bed of broccoli slaw, add a fish filet on top, season, seal and pop in the oven.

Saute it. Add it to a mix of approved veggies for a nice sauteed side dish.

Make a slaw. Mix with medifast dressing and let marinate for a few hours or overnight.

Mix some in with a regular salad. Adds some crunch and a different texture.

This maybe an old post, but worth a bump :-)

I read this and thought immediately of using vinegar and splenda to season/dress, with salt and pepper, marinate overnight. Sort of a variation of the chinese noodle salad I've had before.

Has anyone had this? Broccoli is my favorite veggie right now and Im looking for new ways to eat it. :lol:

Eander, I don't normally like broccoli much (unless it's smothered with butter), but I HIGHLY recommend roasting it. I cut it up lengthwise and put it in a baking pan. Then I spray it with olive oil cooking spray, sprinkle with some sort of seasoning (usually either steak seasoning or Jane's Crazy Mixed-up Salt) and a load of fresh chopped garlic, and toss it to coat. Roast at 450 degrees till it starts turning brown and toasty; the garlic will be soft and roasted. Even the stalks are good this way (in fact, they're my favorite part).

Works well with other veggies, too. I roast zucchini almost every day.

I like roasted eggplant, too. I love to do it on the grill. It may be cold out, but my grill keeps me going on the patio!

Ha. Me, too. I'm actually having to limit myself with some of the veggies: I could polish off a whole pan of broccoli if I let myself. How crazy is that?

I too, love broccoli. mmmmm. My husband and I went out to eat last night and I got a small steak and broccoli. Well, let me tell you, I got my plate and could tell right away I was going to have to send it back. It just wasn't done to my liking. Yes, I sent back my broccoli. Another first in diet history, lol. I was snickering to myself and my husband asked why.....I said "This is a first for me....I've never sent back my broccoli....steak, yes, but broccoli?" Guess ya had to be there, but it made me laugh.

Jo.... :laughlaugh: .....I can relate......when we limit our foods we can get quite picky and rightfully so.... :D ...we now appreciate the food we have and want to enjoy every last bit.. :yes: ......and not be disappointed
