Banana Muffins

Ok, Jonna and Pashta, you've GOT to try this one! MUCH better than the brownies, I PROMISE!!

1 pkt oatmeal (I used Maple and Brown Sugar)
1 pkt scrambled eggs
2 pkts
NANNER puddin
1 1/2 c water
2 pkts Splenda
(plus maybe a pinch more)
1/4 t baking powder (hmmm, or did I use 1/2 t?? :scratch: Yep, I think it was 1/2...maybe :?: :roll: )
pinch of salt
1/2 t vanilla
up to 2 t combination of whatever banana-y spices you like
(nutmeg, cinnamon, allspice, ginger, cinnamon, cloves and probably some cinnamon -- when in doubt, just use the pumpkin pie spice plus a little cinnamon and sprinkle a little nutmeg over the top for good measure)

Whisk well and let sit for about 15 minutes. Whisk again and pour into Pammed cupcake tins, no paper cups (too much batter for 4 unless you have those gianormous Texas thingies; 6 means you'll have 1 1/2 muffins -- ick, math; so do 8 and remember to eat 2 for a meal). Any way you slice it, this should total 4 meals.

Bake in a 350 oven for at least a sitcom (I keep forgetting to set the timer -- I think it was closer to 40 or 45 minutes -- not quite an entire CSI episode). Check with a toothpick. Tops should be definitely browned but not cajun style.

Oh my, oh my, oh my! Even cold (as in keep them refridgerated) the next day they were pretty darn tasty and kept calling for butter or cream cheese (but I chastised them severely and ate them nekked). Great with a steamy cup o' decaf joe!

OOOH! I just had a thought!! If you use the blueberry oatmeal and the vanilla pudding, would that not make blueberry muffins?? (perhaps minus all the spices, but I bet a little almond or lemon extract would liven things up a notch) Hmmmm, I'm thinkin' I'll have to try that for Friday morning...

FINALLY, between Jonna's pancakes and these muffins, I LIKE the oatmeal! Jonna, you have saved me!! :bow: Your pancakes is where all this started!

(Psst -- Pashta, if you let the "brownies" sit in the 'fridge for 2 days, they actually taste a little better, but still not as good as the banana muffins! :eat:)

Hehe thanks Diana, I may try this.. I'm running low on supplies though so I'll have to decide if I want to give up my favorite puddings for it! I LOVE banana puddings! ;)

Maybe some Walnut Extract in there, too.

Also, try covering with foil while they cook and you don't get the yucky skin that forms on top.
