I KNOW I saw a foil baked fish recipe on here somewhere but for the life of me I can't find it. UGH! :roll:

We're having some Tilapia this evening and would really like to try the foil technique.

Any help is much appreciated! 8)

Dunno, but I found this at bestmed dot com. I'd leave out the carrots, of course. Or substitute an allowed veggie instead.

Baked Fish in Foil:
Yield: 4 servings

Ingredients:
4 Fish Fillets-cod, perch, whitefish, etc (1 pound)
Salt and pepper to taste
1 small carrot, slice lengthwise
½ medium onion, sliced
1 Tablespoon minced, fresh parsley, if desired

Method:
1. Preheat oven to 450 degrees.
2. Divide fish into 4 serving portions. Place each portion in center of a 12-inch square of foil that has been sprayed with nonfat cooking spray.
3. Sprinkle with salt and pepper.
4. Place carrot and onion on fish. Seal foil.
5. Place on shallow pan. Bake for 25-30 minutes.

Fold back foil, sprinkle fish with parsley. Serve in foil.

I use flounder and tomatoes and onions ... absolutely divine.

I spray foil with Pam first. Place the fish in the foil, cover with sliced tomatoes and chopped onions. Sprinkle with salt, pepper, garlic powder. I cinch one end of the foil and add a bit of vegetable broth to keep it from burning too quickly. It takes about 15 minutes (depending on the thickness of the fish) in a 350 degree oven.

I've also made this on the grill in the packets -- great for in the summer - no heating up the house with the oven!

You can also make a veggie packet to go with it -- same premise as the fish - use zucchini and yellow squash with some onions ... mmmmmmm

I'm thinking I need to have this again real soon!!!

Yesterday I tried to grill some cod on the george foreman grill but it STUCK to the grill and that was really annoying. I didn't spray it with Pam first, maybe I should have. Does anyone else on here have a foreman grill with some tips for me? Pppplease? :scratch:

We've done it before and we had to spray the grill with PAM first otherwise it got stuck - been there...done that....heck of a time cleaning it up!!! Not to mention losing some of my fish :shock:

It was good when I used the PAM - try it again!

I agree...try again. I spray my grill also and don't have any problems. ;)


I had my foil baked Tilapia Sunday night and it was freaking AWESOME!
I sprayed it with ICBINB and sprinkled it with Lemon Pepper Mrs. Dash...then put some sliced onion on top. About a minute or two before it was done I sprayed it with a roasted garlic spray.

It was to die for. YUM!
