Just wondering if you are out there. I need people to help me doctor stuff legally and make legal caribbean treats. For example - I really miss dulce de leche ice cream and the solid dulce de leche. I know. Baaaad!! Anywho, I bought a Cuisinart ice cream maker and the DaVinci Sugar Free Syrup in dulce de leche flavor. I am going to use my supplements (banana creme shake and banana pudding) and add some spices(nutmeg etc) and the syrup to make dulce de leche for one of my sat nite meals - would be a nice treat or sunday afternoon in the park treat.

I am currently hunting sugar free guava and guanabana syrup. :shock: Best I could find was sugar free guava iced tea. :D I can maybe use that instead of water when I make my vanilla shake. I will check all the carbs, of course.

I also need advice for making fish our style but legally. I just can't do grilled salmon for the next five months; don't even like salmon. I don't eat tuna, or whiting or trout. I get fresh south american fish and organic snapper and want to season and prepare it legally. So if you are out there and have experience, please, please share with me.

Nat,

I am of Puerto Rican descent, and my family is all on the program. Obviously not much of our foods are great on this program, but Sofrito in small quantities actually fits in. The Goya Sofrito (Easier than preparing fresh) has 0 Calories per serving and 1 gram of carbs. If you are able to prepare your fish with the 1 tsp serving, it may be an option for you. My family actually uses the Sofrito in our vegetables and sautée them until your desired doneness.

Good luck and I will be interested to see your tips that you figure out. I'm sure my family will appreciate it too :)

Hey Brian!!!

I was getting scared I was all alone here. :-P Thanks for the reply. You know, yesterday I was in the supermarket and I was looking at Goya seasonings and trying to read all the labels. That store did not have sofrito but I know where to get it. Wohoo! I can live with one teaspoon on the talapia filet. Never tried it on veggies but will try it on the green beans and asparagus this week.

I make my shakes with a magic bullet. So the banana or vanilla with the dulce de leche syrup is really good. I used four ice cubes and dont let it liquify but stop it when it looks like slush. MMMMMM It was so good. So every now and then I will do that. I am waiting for the sugar free guava iced tea to see if that can jazz up the oatmeal and the vanilla shakes and the pudding, when I have that "feva for da flava."

Are you guys into bacalao? I wanna try to make a low salt bacalaitos with pureed cauliflower for the potatoes and a few medifast crakers. Of course I'd boil the excess salt out the codfish. I have to email Nancy about it. If I find anything else I will let you know.

But MOST of all, congrats on your amazing success!!! And to your family for being on this journey with you. My family is 99% skinny. :) I know that for most people success is NOT thinking about the things I have just rambled on about. But I know for me - I have to search for some legal ways to make it more fun for me. Like "EthniFast", "GreekFast" "CariFast". :D :-P

You'll definitely have to let me know how this turns out. Our Christmas dinner every year is Puerto Rican food and anything we can do to come close would be a help. While there are restaurants in my hometown for our food, the food is obviously non-compliant as they would prepare it. We normally don't prepare it real often because of the time it takes. With everyone in the family being on the program though anything that can still allow us to have our foods, without going off-plan is appreciated. I will chat with my mom this week and see if she has any ideas for changes that might still allow us to have our foods.

By the way, where in the carribean do you hail from?

I am from Guyana with a Venezuelan great grandpa. My hubby is from Jamaica and I went to law school in Barbados for a lil bit as an exchange student. So I got a lot of tastes to clean of my palate. :-P

Thats quite a bit of background. I would love a jerk seasoning that is compliant. My family has lots of Jamaican friends and I love a good jerk chicken.

I think I found one. BUT I feel the label HAS to be wrong, so I have not used it. Here is the info:


Brand: Grace (jamaica based food company - the Jamaican KRAFT :) )
Ingredients: scallions, salt, hot peppers, brown sugar, black pepper, thyme, garlic, vinegar, spices, vegetable or soy oil

Nutrition:

Serving Size - 1 tsp
Calories - 0
Fat - 0
Sodium - 290mg
Total Carb- 0
Protein - 0


How can it have zero calories and zero fat?? So I have it the fridge until someone at Grace swears on his momma's grave, because I could see myself using that everyday - even on my boca burger on my meatless days. :D

Doubt I can find that here. Gotta love living in the sticks. You'll have to let me know what you find out. But in that small of a quantity it may be that it is just under 1 gram of fat and carbs, etc. Must be a tiny portion of brown sugar to be no carbs.

You can also get fresh/frozen recaito in most supermarkets in the frozen food aisle with the Goya products. It lasts forever in the freezer and you can just add what ever amount you need when you cook and put the rest back.
