I have been making this for ever it seems like, I recently tried it with sugar replacement and it was still lovely!

Gateau Neigeux

1 TBSP Knox gelatin powder
1/4 C cold water
1 C boiling water
Splenda or sweetner equal to 1 cup
1/4 C lemon juice (or: 1/4 C less 1 Tsp water, with 1 Tsp any extract)
3 egg whites

Mix the Knox powder with the cold water.

Add boiling water and stir until dissolved.

Add Splenda and lemon juice. Put in refrigerator - stir every 10 minutes until thickened.

Beat gelatin mixture until totally frothy.

Add egg whites and beat until stiff.

Refridgerate before serving. Keeps for 3-4 days in fridge.

Makes approximately 8 servings. Per serving: 11 calories & approx. 1/2g carb.

Wow, never heard of that! What does it look like, and what is the texture, is it like Jello or mousse?

Sounds like it will be like a white mousse. Should be white with a name like snow cake. ;)

Alors, Mike.. tu parle francais!?

I dont' know if there is a "real" name for it.. we just called it gateau neigeux since I'm a kid.

It is a sort of cross between a mousse and a jello.. it's a creamier jello, and a firmer mousse, and it is white in colour.. though when I make it with flavored extracts I sometimes add food colouring to make it more fun for the kids in the family.

Often for guests I make this.. and buy the biggest strawberries I can find, scoop the middle out with a melon baller and serve stuffed with the gateau neigeux with some shaved chocolate over top.

Yeah, I had 3 years of French but couldn't remember what gateau meant and don't recognize the other word. :)

I had a year in H.S. (ages ago)... but I remember a number of words. I took a year of Spanish, then thought I'd try French (frankly Spanish was easier), so I switched back to Spanish.
